Mediterranean Glow

Great for group gathering. Food processor highly helpful.

  • 15oz can Chickpeas

  • 1 English cucumber

  • 1/2 loosely-packed cup Mint, fresh leaves

  • 1/2 packed cup Parsley, fresh

  • 1/2 Red onion, small

  • 2 cups Chicken or vegetable stock

  • 1 cup Quinoa, dry

  • salt and pepper

  • 1/2 cup Olive oil, extra virgin

  • 1/2 cup Pistachios, roasted salted

  • 1 cup Feta cheese

Dressing. Toss in just before serving. Doesn’t take much.

  • 1 whole lemon

  • 1/3 cup olive oil

  • celtic salt n pepper to taste
