Mediterranean Glow
Great for group gathering. Food processor highly helpful.
15oz can Chickpeas
1 English cucumber
1/2 loosely-packed cup Mint, fresh leaves
1/2 packed cup Parsley, fresh
1/2 Red onion, small
2 cups Chicken or vegetable stock
1 cup Quinoa, dry
salt and pepper
1/2 cup Olive oil, extra virgin
1/2 cup Pistachios, roasted salted
1 cup Feta cheese
Dressing. Toss in just before serving. Doesn’t take much.
1 whole lemon
1/3 cup olive oil
celtic salt n pepper to taste
